RECIPE FOR FOXTAIL MILLET SALAD

You will need:

  •          1/2 cup foxtail millet
  •          1 raw mango, peeled and chopped (optional)
  •          2 cucumbers, peeled and chopped
  •          1 red radish, finely chopped
  •          1 onion, finely chopped
  •          a small bunch of coriander leaves, finely chopped
  •          1 teaspoon of mustard
  •          1 teaspoon olive oil
  •          1 teaspoon honey
  •          juice from one lemon
  •          salt and pepper to taste

Directions:

  1. To begin making the Healthy Foxtail Millet Raw Mango & Vegetable Salad Recipe, we will first cook the foxtail millet.
  2. In another sauce pan; add in the millets along with 1 cup of water. Bring the millets to a boil, then turn the heat to low.
  3. Cover the pan and allow the millets to cook for about 15 to 20 minutes until all the water is absorbed and the millets are cooked. You can also cook the millets in the pressure cooker to speed up the cooking process. The millets should be grainy at the end of the cooking process.
  4. Stir in a teaspoon of olive oil and salt to the millet to prevent from sticking to each other. Allow the millets to cool completely. As it cools down, it will fluff up when it cools down.
  5. In a large mixing bowl, combine the cooled millets and the remaining ingredients. Toss well to combine. Once well combined, check the seasonings levels and adjust to suit your taste.
  6. Serve the Foxtail Millet Raw Mango & Vegetable Salad as a wholesome lunch, dinner or even pack it into your lunch boxes.
