Kanglayen - Dried Split Gill Mushroom is a small, light-brown fungus clings and multiplies on a moist of decaying tree branches especially after a long rain. In Manipur Kanglayen is used in different dishes like Kanglayen Kangsoi (stew), Kanglayen Paaknam (pancakes), Kanglayen Eromba and Kanglayen Singzu (spicy chutney).

Ingredients1 cup Kanglayen (nicely cleaned and soaked)2 cups water1 medium size Potato (peeled and thinly sliced)2-3 Ngari (fermented fish)5-10 red chillies (or 1 Umorok paste) Salt to taste and some Coriander leaves for garnish
